The tequila rested for 59 days, right up to the legal limit for a blanco, in one barrel from Westward Whiskey, the Portland, Oregon maker of single malt American whiskey. That barrel previously held Westward's collaboration with James Beard award-winning baker Ken Forkish, made with his French sourdough levain in place of traditional yeast.\u003c\/p\u003e\u003cp\u003eThe agave comes from the estate, is cooked in brick ovens, milled with a roller mill, fermented in open-air stainless steel, and twice distilled. The barrel influence is subtle rather than heavy, so the agave stays bright and clean with a little something extra underneath. Expect cooked agave with light malt and vanilla on the nose, clean agave and citrus over a soft layer of oak on the palate, and a faint toasted-bread note that carries into a crisp, gently spiced finish.\u003c\/p\u003e\u003cp\u003eWith one barrel behind one release, this is a blanco pushed as far as a blanco can go, and a good pick for collectors of limited tequila and for anyone who likes whiskey-barrel crossovers.
