Piedra y Agave is a dedicated authentic-production line from Tequilera de los Altos Casa Loy (NOM 1633), built specifically for connoisseurs who demand traditional methods free of diffuser shortcuts. The distillery draws from family-owned Los Altos agave fields, selecting piñas only at full maturity, then slow-cooks them in a traditional brick oven. Extraction follows via tahona — a stone wheel — with no water added, and fermentation runs seven days in open-air tanks with agave fibers intact using a proprietary local yeast strain that distinguishes this line from Casa Loy's broader commercial range.
The Blanco opens with sweet cooked agave and ripe tangerine on the nose, underscored by vanilla and a lift of green apple. The palate delivers that same rich agave sweetness alongside mild cinnamon and vanilla bean, closing on a clean, cooling spearmint finish that lingers without heat.
