Highland Park Cask Strength Release No. 5 embodies the rich heritage and craftsmanship of the Highland Park Distillery, established in 1798 in Kirkwall, Orkney. This fifth release showcases a meticulous maturation process, predominantly in first-fill, sherry-seasoned European oak casks, including Pedro Ximénez casks, along with refill and ex-bourbon casks. Bottled at cask strength, this whisky delivers an intense flavor experience without dilution, merging traditional whisky-making techniques with innovative flavor exploration.

Tasting Notes

Appearance: The whisky displays a deep gold color, clear and bright, reflecting its natural cask-driven essence with no additives.

Nose: The aroma opens with a complex bouquet of dried cloves, fresh oregano, crushed pine needles, and lingering wood smoke, inviting you to explore its depth.

Palate: On the palate, the whisky reveals deliciously intense flavors of sun-dried fruits—prunes, dates, and sultanas—attributable to the influence of Pedro Ximénez casks. The first-fill European oak casks impart aromatic hints of liquorice and winter spices, beautifully balanced by cocoa nibs and light oak from the ex-bourbon casks.

Finish: The finish is delightfully fragrant and smoky, lingering on notes of sherried fruits and sweet spices, creating a warm and satisfying end.
