The Last Drop 32 Year Old Single Malt Irish Whiskey is a landmark release, representing the third Signature Creation from The Last Drop Distillers and their inaugural foray into the Irish whiskey category. Crafted with meticulous care by Louise McGuane, the founder of JJ Corry Irish Whiskey, in collaboration with Rebecca Jago and Helen Mulholland, this whiskey embodies the culmination of decades of expertise and passion. Originating from a selection of vintage 1991 Single Malt whiskeys, it was carefully married and finished in an ex-Oloroso Sherry Butt, adding a rich and complex layer to its profile. This release is not just a whiskey; it's a celebration of craftsmanship and the spirit of collaboration among three pioneering women in the whiskey industry.

Tasting Notes

Appearance: Medium gold, reflecting its decades of maturation.

Nose: An enticing blend of aromas greets you, starting with crisp apple and dried fruit, intertwined with warming cinnamon spice. The sweetness of burnt sugar is complemented by a subtle hint of oak, promising a unique tasting experience.

Palate: The whiskey's age is evident in its smooth, subtle warmth that builds elegantly on the palate. The maturation process has bestowed a refined lightness, guiding you through layers of rich, creamy raisins, toasted almonds, and luscious dark chocolate. Each sip reveals the complexity and depth of flavors, seamlessly intertwined to create a harmonious balance.

Finish: The finish is long and comforting, with the dark chocolate notes evolving to include a touch of pleasant bitterness. The flavors of fruit cake, combining the rich raisins and nuts, make a reappearance before the clean, satisfying conclusion, leaving a lingering and memorable impression.
