Produced at NOM 1646 (Destiladora La Roca), the blanco is built from agave hearts slow-cooked in a historic brick oven for 42 hours, then naturally fermented and double-distilled through a five-tank process — a method that preserves the highland terroir rather than standardizing it away. The Blanco serves as the foundation of the full Cabal lineup, which extends to Reposado and Añejo expressions distilled from the same estate agave.
