Brugal 1888, a dry Dominican rum aged first in American oak and then in Spanish sherry casks, with Hella Cocktail Co.'s five-flavor bitters bar set. Hella made the Ginger bitters for rum, and Brugal's dry, oaky style makes an outstanding rum Old Fashioned with the Aromatic or Mexican Chocolate.

Five 50 ml bottles of bitters, about 35 drinks each.

Tasting Notes

Color: Brugal 1888 is a deep mahogany-amber; the Hella bitters range from orange to deep mahogany.

Nose: Brugal 1888: dried fruit, cocoa, cinnamon, vanilla and toasted oak. Hella bitters: fresh ginger, clove and cinnamon, orange peel, dried chili and dark chocolate.

Palate: Dry rather than sweet — dried fruit, oak and spice from the sherry casks; Aromatic or Mexican Chocolate bitters round it into a rich rum Old Fashioned, Ginger brightens it in a highball.
