Knob Creek's 12 Year Cask Strength is back for the first time since 2020: twelve years in charred American white oak, bottled uncut at 121.2 proof.
Seventh-generation Master Distiller Fred Noe hand selected barrels from ten lots in the Clermont, Kentucky rickhouses, batched them, and bottled the result at full cask strength (60.6% ABV) with no water added. The extra age brings deep caramel, char and dried apple on the nose, then a rich, oily palate of butterscotch, dried apple and seasoned oak before a long caramel-and-cinnamon finish. A limited edition release for the 2026 holiday season, and only the second time Knob Creek has released a 12 year at cask strength. 750ml.

Why Liquor Geeks recommends it
Twelve years in charred American white oak, then bottled uncut at 121.2 proof: this is Knob Creek turned all the way up. Master Distiller Fred Noe hand selected barrels from ten lots in the Clermont, Kentucky rickhouses and batched them at full cask strength with no water added, and the extra age shows. Expect caramel, barrel char and dried apple on the nose, a rich, oily palate of butterscotch, baking spice and deeply seasoned oak, and a long finish where caramel and cinnamon linger well after the sip. It suits the bourbon drinker who already knows they like big, oak-forward whiskey and wants to explore what proof and age do together. It rewards patience in the glass and a few drops of water. Collectors will note the context: this is only the second time Knob Creek has released a 12 year at cask strength, and its first return since 2020, arriving as a limited edition for the 2026 holiday season. We carry it because it is a genuinely uncommon release that still drinks honestly.
Pairs well with
- Caramel apple tart — The tart echoes the dried apple and butterscotch on the palate while the whiskey's caramel finish ties the dessert together.
- Smoked brisket — The barrel char and deeply seasoned oak stand up to smoky, rich meat without getting lost.
- Holiday fireside nightcap — A slow pour suits the long, warming finish of caramel and cinnamon on a cold winter evening.

What is the best way to drink it?
Pour a small measure neat in a Glencairn and let it rest a few minutes so the caramel comes forward. Add water a few drops at a time to open the dried fruit and butterscotch. For a cocktail, a simple Old Fashioned with demerara syrup, bitters and one big cube works well.
