Tasting Notes

Appearance:
Deep amber with copper and mahogany hues, indicating significant interaction with the oak over time.

Nose:
Aromas of toasted coconut, vanilla bean, and molasses open the bouquet, followed by layers of charred oak, dried tropical fruit, baking spices, and a whisper of sea breeze salinity—a nod to the island’s coastal climate.

Palate:
Rich and full-bodied with immediate warmth from the high proof. Flavors unfold with burnt caramel, brown sugar, and ripe plantain, evolving into notes of dark chocolate, clove, nutmeg, and leather. Mid-palate brings a gentle oak tannin structure and hints of smoky spice and dried pineapple.

Finish:
Long, warm, and complex. Lingering impressions of vanilla, allspice, and toffee fade slowly into a dry oakiness, leaving a satisfying glow on the palate.
