Why Liquor Geeks recommends it
This is an American single malt made from malted barley, aged a minimum of six years and bottled at its natural cask strength of 116.9 proof (58.45% ABV). It comes from a collaboration between Beverly Spirits founder Andrew Borenzweig and Cedar Ridge Master Distiller Murphy Quint. Its finish in first fill Amontillado sherry and French oak casks shows from the first pour: cocoa, soft leather and fig on the nose, then caramel, toffee and candied cherry giving way to hazelnut, raisin and dried fruit. The finish runs long with dark chocolate, sherry-soaked dates and a slow fade of dried orange peel. It suits the drinker who already loves sherried malts and wants to see what an American producer does with the idea. It rewards patience, a few minutes in the glass and perhaps a drop of water. We carry it because it is a limited release with a clear point of view. It is built first for contemplative sipping, though it also makes a decadent Old Fashioned.
Pairs well with
- Seared foie gras — The rich, savory fat meets the whiskey's caramel, toffee and candied cherry for a decadent contrast.
- Aged Manchego and Marcona almonds — Nutty cheese and toasted almonds echo the hazelnut and toasted nut notes from the Amontillado cask.
- After-dinner medium-bodied cigar — A nutty, creamy cigar draws out the dark chocolate and oak in the long, warming finish.
